We know the name of the farmer, the altitude of the meadow, and the day the smoke was lit. That is not marketing — that is how Slovak food has always been made.

Sheep cheese older than the republic.

Sheep graze above 1,400 metres on High Tatra meadows where wild thyme, yarrow, and mountain clover grow between limestone outcrops. The milk is carried down by the same families who have been making this cheese since the 15th century. Ours arrives in wooden tubs, still smelling of those meadows.

The forests east of the Tatras hold meadows so remote that the bees work undisturbed by modern agriculture. Spiš honey carries the flavour of linden blossom, wild raspberry, and the particular mineral sharpness of mountain air. It arrives in our kitchen in hand-labelled jars from one beekeeper, Ján Krajňák.

Slow-smoked for seven days over beech and cherry wood by a butcher in Holíč whose family has kept the same smokehouse since 1952. The fat renders to silk in the pan. The smoke is a memory of autumn mornings — wood fires, mist on the river, the snap of cold air.
